Greek Vegetable Skewers

  • Servings: 10 5-inch skewers

Ingredients:

  • 5-inch skewers, soaked in water for 30 minutes
  • ­­­­3/4 cup Marie’s Roasted Tomato with Parmesan & Basil Vinaigrette, divided
  • 2 medium zucchini (about 8 ounces total), sliced into 1/2-inch pieces
  • 10 cherry tomatoes
  • 1 small red onion, cut into chunks
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 tablespoon chopped fresh dill

Directions:

Alternate vegetables on skewers using 2 pieces zucchini, 2 pieces onion, 2 pieces bell pepper and 1 tomato per skewer. Drizzle with 1/4 cup Marie’s Roasted Tomato with Parmesan & Basil Vinaigrette, turning to coat with dressing.

Prepare grill for medium heat. Grill vegetables until cooked through, 8 to 10 minutes, turning several times.

Sprinkle with dill and serve with remaining Marie’s Roasted Tomato with Parmesan & Basil Vinaigrette for dipping or drizzling.
