Grilled Vegetable Salad with Roast Beef

Ingredients:

  • 1 red bell pepper, seeded and cut into 1-inch strips
  • 1 yellow bell pepper, seeded and cut into 1-inch strips
  • 1 green bell pepper, seeded and cut into 1-inch strips
  • 1 small zucchini, sliced ½-inch thick
  • 1 yellow squash, sliced ½ -inch thick
  • 1 cup Marie’s Greek Vinaigrette
  • 1 (6 oz) bag mixed greens
  • 1 cup chilled, cooked roast beef, 1/2-inch strips
  • 2 tbsp grated Asiago cheese

Directions:

In large bowl, toss cut vegetables with ½ cup Marie’s Greek Vinaigrette.  Grill vegetables on medium high for 10 minutes or until tender.  In same bowl, toss greens with ½ cup Marie’s Greek Vinaigrette.  Add grilled vegetables and roast beef and gently toss again.  Top with grated Asiago cheese.
