Grilled Veggie Sandwich

Ingredients:

  • 1 small zucchini, sliced thin
  • 1 small yellow squash, sliced thin
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • 4 Kaiser rolls, toasted
  • ½ cup Marie’s Lite Blue Cheese Dressing

Directions:

Preheat grill on high heat.  Brush vegetables with olive oil on each side.  Brush grill with oil.  Place vegetables on grill and cook for about 3 minutes on each side.   Toast sliced rolls on grill for 1 minute.  Spread Marie’s Lite Blue Cheese Dressing on cut sides of roll.  Layer grilled vegetables to make a superior veggie sandwich.
