Quinoa Tabouli

Ingredients:

  • 1 cup red quinoa, rinsed
  • 2 cups water
  • ¼ cup Marie’s Lemon Herb Vinaigrette
  • 1 cup fresh tomatoes, diced
  • 2 green onions, chopped
  • 1 cup parsley, finely chopped
  • 2 tablespoons fresh mint, finely chopped
  • Salt and pepper to taste

Directions:

Place 1 cup of red quinoa and 2 cups water in saucepan and bring to a boil. Reduce to simmer, cover and cook for 12 minutes. Transfer cooked quinoa to large mixing bowl and toss with Marie’s Lemon Herb Vinaigrette Dressing. Add tomatoes, green onions, parsley, and mint and toss again. Season tabouli with salt and pepper to taste.
