Smoked Turkey, Spinach & Mushroom Salad

Ingredients:

  • 2 (6-ounce) bags baby spinach
  • 8 ounces small whole mushrooms
  • 1/2 cup thinly sliced roasted red bell pepper
  • 1/2 cup pitted black olives
  • 1 pound smoked turkey cut into julienne
  • 1 ounce Parmesan cheese, shaved into strips with vegetable peeler
  • 3/4 cup Marie’s Italian Vinaigrette

Directions:

Divide spinach between four plates. Top with mushrooms, bell pepper, olives, turkey and Parmesan. Drizzle with Marie’s Italian Vinaigrette.
