Mexican Avocado, Bacon & Mango Salad

Ingredients:

  • 1 (5 oz.) bag arugula or mixed greens
  • 8 slices bacon, cooked and crumbled
  • 2 tbsp. minced serrano or jalapeno chile
  • 2 medium avocados, peeled and cut into 1/2 inch cubes
  • 1 mango, peeled and cut into 1/2 inch cubes
  • 1/3 cup Marie’s Blue Cheese Vinaigrette
  • 2 oz. (1/2 cup) pepitas (pumpkin seeds), toasted

Directions:

Divide arugula between four plates. Combine remaining ingredients except pumpkin seeds; toss gently to coat with dressing. Top arugula with avocado salad; sprinkle with pepitas. Serve immediately.
