1 rotisserie chicken (from the supermarket deli), chilled
1 (12 oz) bottle Marie’s Blue Cheese with Bacon dressing, divided
6 burrito-size tortillas or flavored wraps
1 (6 oz) package baby spinach
3/4 lb carrots, peeled and shredded
1/2 cup sweetened dried cherries or cranberries
1/2 cup chopped walnuts
Pull meat from chicken, discarding skin and bones.
Spread 2 tbsp of Marie’s Blue Cheese with Bacon dressing over each tortilla. Layer spinach on top of tortillas. Combine chicken, shredded carrots, dried cherries, walnuts and remaining Blue Cheese with Bacon dressing; mix well. Divide chicken salad among tortillas. Roll up burrito style.
