Meaty smoked turkey, leafy spinach and whole mushrooms are the starting point for this beauty. The end is the best part: a drizzle of light, satisfying Marie’s Italian Vinaigrette.

Ingredients
2 (6-oz) bags baby spinach
8 oz small whole mushrooms
1/2 cup thinly sliced roasted red bell pepper
1/2 cup pitted black olives
1 lb smoked turkey cut into julienne
1 oz Parmesan cheese, shaved into strips with vegetable peeler
3/4 cup Marie’s Italian Vinaigrette
Directions
Divide spinach between four plates. Top with mushrooms, bell pepper, olives, turkey and Parmesan. Drizzle with Marie’s Italian Vinaigrette.
