Ingredients
2 ea. 6-8 oz. salmon fillets
8 oz Trimmed Asparagus
Flour (for coating)
8 Tbsp. Marie’s Lemon & Herb Veggie Skillet Sauce
3 Tbsp. Oil
Lemon or Thyme (for garnish)
Directions
Break or trim off the base of 8 oz. of asparagus, leave whole or cut into 2” lengths.
Season fillets of salmon with salt and pepper and lightly coat with flour. Heat a large skillet over medium heat and add 2 T of oil to skillet. Slide salmon into the skillet (skin side up). Cook until lightly browned (about 4-5 minutes). Carefully flip to skin side down and cook for another 3-4 minutes. Keep on low heat or place skillet in low temperature oven (~200° F) and bring to an internal temperature of 145° F.
In a separate skillet, add 1 Tbsp. of oil over medium-high heat. Add asparagus and cook until asparagus is cooked to desired texture. Add Lemon & Herb skillet sauce to the asparagus and heat. Place salmon fillets on plates, place asparagus on plate with salmon, spoon remaining sauce over the salmon fillets. Garnish with a slice of lemon or a sprig of thyme.
