Mediterranean Mint Quinoa Salad

Ingredients
1 can chickpeas (15oz) (drained/rinsed)
½ red onion (diced)
½ cup feta cheese (cubed)
1 ½ cups cucumber (quartered)
½ cup mint (chopped)
½ cup parsley (chopped)
1 cup quinoa (cooked/cooled)
½ cup chopped pistachios
½ cup Marie’s White Balsamic Shallot dressing
Directions
In a large bowl add all prepared ingredients.
Toss to thoroughly coat.
Add in Marie’s dressing, you can add more if desired.
Salt and pepper to taste chill in fridge or serve immediately.
