Chicken Panini with Red Wine Vinaigrette
Marie’s Red Wine Vinaigrette provides a sumptuous twist on the traditional panini.

Ingredients
1 loaf of focaccia bread, quartered
2 tbsp butter
4 slices of provolone cheese
8 oz sliced cooked chicken breast
1/2 red onion, sliced very thin
Freshly ground black pepper to taste
2 cups arugula leaves
2 tbsp Marie’s Red Wine Vinaigrette
Directions
Slice each focaccia bread quarter in half and butter each slice. Arrange chicken, red onion and cheese evenly on four slices of bread, butter side down. Add fresh cracked pepper to taste. Top with second slice of bread, butter side up. Place each sandwich in a sandwich press or use a heavy cast-iron pan to press in hot skillet and cook 5 minutes each side until golden brown. In a medium bowl, toss arugula with Marie’s Red Wine Vinaigrette. Remove top of sandwich and add arugula over chicken. Replace top and serve.
