Blackened Salmon Caesar Salad

This weeknight dinner is easy to make and full of flavor!

2 salmon filets
2 tbsp blackened seasoning
2 tbsp avocado oil
2 tbsp butter
1 tbsp chopped parsley
1 head romaine lettuce, washed and chopped
½ cup croutons
¼ cup shaved parmesan
½ cup Marie’s Caesar Dressing
Lemon, for serving

Pat salmon filets with a paper towel until dry. Sprinkle seasoning evenly on both sides.
In a pan over medium heat, add oil. Once heated, sear one side of salmon for 3-5 minutes. Flip and immediately add butter. Sear for an additional 3-5 minutes, basting with melted butter often. Sprinkle on parsley and set aside.
In a large bowl, combine lettuce, croutons, parmesan, and Marie’s Caesar Dressing. Add more dressing to taste.
Divide salad between two plates. Top each with salmon filet.
Squeeze lemon wedges over salads and enjoy!
