Blue Cheese Egg Salad Sandwich

Creamy Marie’s Chunky Blue Cheese Dressing blends perfectly with chopped eggs, savory pancetta, and fresh chives for a bold twist on a classic. Serve it on a toasted bagel with crisp red onion slices for a satisfying bite that’s anything but ordinary.
Ingredients
Spray cooking oil
8 Lg eggs
¼ cup chives (diced)
Marie’s Chunky Blue Cheese Dressing
¼ cup Pancetta (cooked)
¼ red onion (sliced thinly)
Bagel
Directions
Preheat the oven to 350°
In a bread loaf pan spray with cooking oil. Add eight large eggs.
Place the bread pan onto a cooking tray with an edge. Add to the cooking tray 2 cups of water. Place in the oven for 30 minutes.
When finished cooking carefully remove the cooked eggs and chop finely.
Move the chopped eggs into a bowl. Add in to the chopped eggs, the chives, pancetta and Maries Dressing (start with a quarter cup and add more if desired). Stir to combine thoroughly. Once all is combined, refrigerate for roughly 30 minutes.
Add to a sliced bagel and top with red onion. Serve and enjoy!
