Blue Cheese Buffalo Chicken Appetizer
The perfect appetizer does exist! This combo of buffalo chicken meatballs, crunchy celery, and creamy blue cheese are all perfectly paired with a side of Marie’s Chunky Blue Cheese dressing for dipping!

Ingredients
1 lb ground chicken
1/2 cup Buffalo sauce (divided evenly)
1/3 cup panko breadcrumbs
1/4 cup celery (minced)
1/4 cup carrots (minced)
1/4 cup green onions (sliced thin)
1 large egg
½ tsp garlic powder
½ tsp onion powder
½ tsp salt
¼ tsp black pepper
2 tbsp butter
2 stalks celery cut into 1” pieces
Blue cheese cut into ½”-1” cubes

Directions
Preheat oven to 400°
In a large bowl add ground chicken, ¼ cup buffalo sauce, breadcrumbs, minced celery, minced carrots, green onions, egg, and seasonings. Mix until all ingredients are thoroughly combined. Using a cookie scoop or hands, form balls into 1 inch rounds and place on a lined baking sheet. When finished, place baking sheet in oven for 20-24 mins or until balls are cooked through.
Wow, the meatballs are finishing cooking to a bowl. Add melted butter and the remaining buffalo sauce. Whisk to combine. After meatballs are finished add each to the bowl of combined sauce and toss to coat.
Finally to a skewer add the cut celery pieces, followed by a meatball, and then a piece of blue cheese. Serve with Marie’s Chunky Blue Cheese dressing for dipping and the perfect pairing. Enjoy!
