1 sweet potato, peeled and julienned
1/4 purple cabbage, chopped thinly
1/4 cup pomegranate seeds
1 orange, peeled and diced
1/4 cup walnuts, chopped
2 tbsp parsley, chopped
1/4 cup Marie’s Original Coleslaw Dressing
Preheat the oven to 350°F. Place walnuts on a baking sheet or in a small pie tin. Roast in the oven for 3-5 minutes until brown. Keep an eye on them as they can quickly burn. In a large bowl, toss sweet potato, purple cabbage, pomegranate seeds, orange, walnuts, and parsley with Marie’s Original Coleslaw Dressing. To make the slaw creamier, add more dressing.
