Avocado Quinoa Salad

Quinoa is pretty much the “it” ingredient in salads right now, so pair it with an “it” dressing: Marie’s Plant-based Creamy Dill Ranch. With fresh spring greens and creamy avocado, you’ve got one hearty salad on your plate.

1 cup tri-colored quinoa

2 cups water

1/4 cup Marie’s Plant-based Creamy Dill Ranch

1 5-oz bag spring greens

3 scallions, chopped

1 avocado, sliced

In a 2-quart pot, bring 1 cup of quinoa and 2 cups of water to a boil. Once quinoa is boiling, reduce heat and cover pot with lid. Cook for 12 minutes or until all water has been absorbed. Remove from heat and let cool slightly. Once cooled, add Marie’s Plant-based Creamy Dill Ranch and stir.

Arrange greens on serving plate or platter. Top the greens with dressed quinoa. Add chopped scallions and avocado to serve. Drizzle on additional dressing to taste.
