Soba Noodle Salad

We love celebrating salad in its many forms—including ones involving noodles. The smoky-tangy flavor of Marie’s Plant-based Sesame Ginger Vinaigrette is the perfect complement to the satisfying richness of soba noodles. Diced fresh cucumbers and red bell peppers add refreshing color and crunch.

3-oz package dried Soba noodles, cooked

1/4 cup Marie’s Plant-based Sesame Ginger Vinaigrette

1 English cucumber, peeled and diced

1 red bell pepper, seeded and diced

3 scallions, finely chopped

In large bowl, combine cooked soba noodles and Marie’s Plant-based Sesame Ginger Vinaigrette and toss. Add in cucumber, red bell pepper and scallions. Toss again and serve.
